Grandma Betty’s Cheesecake

Ingredients

Following at room temp\n

  • 1/2 cup butter (melted)
  • 1 cup grahm cracker crumbs (fine)
  • 1 tsp cream of tartar
  • 6 eggs – separated
  • 1 1/2 cups sugar
  • 19oz cream cheese
  • 3 tbsp flour
  • 1/2 tsp salt
  • 1 pint sour cream
  • 1 tsp vanilla

Directions

  1. Mix butter in angel food pan
  2. Reserve 1/4 c graham crackers for topping. Mix remaining graham crackers and butter.
  3. Press firmly into base of pan.
  4. Combine eggs whites and cream of tartar. Beat until foamy.
  5. Gradually add 1tbsp sugar
  6. In separate pan, combine remaining sugar, flour, and salt. Gradually beat mixture into cream cheese.
  7. Add egg yolks to cream cheese mixture, mix thoroughly.
  8. Add sour cream and vanilla and mix well. Fold in egg whites.
  9. Pour mixture into pan.
  10. Top with 1/4 c graham crackers
  11. Bake at 325 for 1 1/4 hrs, or until firm.
  12. Turn off heat and open oven door, leave in oven for 10 minutes.
  13. Remove from oven and cool on cake rack.
  14. Chill in refrigerator.
