Carne Molida en Salsa de Chile
A hearty, spicy stew that can be eaten alone, over a bed of rice, or used in gorditas.
Ingredients
1 lb ground beef
~2 cup diced potatoes
½ onion (small dice)
3-5 garlic cloves (minced)
- Salsa
3 Roma tomatoes
2 chile Guajillo
2-3 chile de Arbol
2 garlic cloves
¼ onion whole
¼ tsp Oregano
¼ tsp Cloves
¼ tsp Cumin
Directions
- Start by cooking your ground beef in a saute pan and season with salt and pepper.
- Meanwhile, place your salsa ingredients into a pot of boiling water and cook until soft.
- Take your cooked tomatoes and chiles and add them to a blender along with your garlic cloves, 1/4 onion chunk, oregano, cloves, cumin. Blend until smooth.
- With your meat nicely seared, add your potatoes and cook half way.
- Next, add your diced onion and minced garlic. Mix and continue cooking.
- Mix in your blended sauce until everything is well incorporated.
- Turn heat down to a simmer. Season to taste, and continue cooking until potatoes are soft.
Notes
- The chile de Arbol will determine how spicy the dish is. Add as few or as many as you’d like to adjust the heat level.
