Ingredients

- 1/2 cup butter (melted)
- 1 cup grahm cracker crumbs (fine)
- 1 tsp cream of tartar
- 6 eggs – separated
- 1 1/2 cups sugar
- 19oz cream cheese
- 3 tbsp flour
- 1/2 tsp salt
- 1 pint sour cream
- 1 tsp vanilla
Directions
- Mix butter in angel food pan
- Reserve 1/4 c graham crackers for topping. Mix remaining graham crackers and butter.
- Press firmly into base of pan.
- Combine eggs whites and cream of tartar. Beat until foamy.
- Gradually add 1tbsp sugar
- In separate pan, combine remaining sugar, flour, and salt. Gradually beat mixture into cream cheese.
- Add egg yolks to cream cheese mixture, mix thoroughly.
- Add sour cream and vanilla and mix well. Fold in egg whites.
- Pour mixture into pan.
- Top with 1/4 c graham crackers
- Bake at 325 for 1 1/4 hrs, or until firm.
- Turn off heat and open oven door, leave in oven for 10 minutes.
- Remove from oven and cool on cake rack.
- Chill in refrigerator.
