Indian Baked Chicken Thighs

Indian inspired baked chicken thighs to be served with basmati rice and roasted tomatoes and red onion.

Ingredients

  • 6 chicken thighs & legs

  • 1/2 onion - chopped

  • 6 garlic heads

  • 1/2 cup chopped cilantro

  • Juice of 1/2 lemon

  • Garlic powder

  • Turmeric powder

  • Cumin powder

  • Coriander powder

  • Paprika powder

  • Rosemary powder

  • Crushed red pepper

Directions

  • Combine marinade with bone-in chicken thighs and legs.
  • Set in baking tray and cover with foil.
  • Bake for 1 hour covered at 400.
  • Remove foil and bake for an additional 10 minutes.
  • Serve over rice.
