Pozole

Ingredients

  • 1 large can of pozole hominy

  • 3 lbs espinazo

  • Sauce
  • 10 large Guajillo peppers

  • 5 Chile de arbol

  • 3 cloves or garlic

  • Cloves

  • Cumin

  • Black Peppercorn

Directions

  • Add meat to a pot of water with half a raw onion and a salt to flavor.
  • Fry all the peppers in oil. After toss them in a blender with a pinch of cloves, cumin, and black peppercorn. Add water to create a salsa.
  • Once the meat is cooked, sift the sauce and add to pot.
  • Drain can of pozole and add to pot and bring to a boil.
